So what does this soup have to do with Outlander? Well without giving too much away, Claire and Jamie return to Jamie’s home in Scotland where they have planted potatoes for the first time, and are now harvesting them. Not being familiar with potatoes, one of the tenants asks, “Ye eat them, ye say? I dinna see how ye’d ever grind them in a quern for bread or parritch.” To which Claire responds that you can boil them or mash them or fry them or chop them up and put them in soup. So that’s what they do… “with ten pails of milk from the dairy shed, three chickens caught from the coop, and four dozen large leeks from the kailyard, [Claire] presided over the preparation of cock-a-leekie soup and roasted potatoes for the laird and tenants of Lallybroch.”

Since I’m not a laird (or a lady, I suppose would be more accurate) and don’t have tons of tenants to feed, I didn’t feel the need to make ten pails of milk, three chickens, and four dozen leeks worth of soup. Instead, I made a normal modern day family-sized portion of soup with 1 1/2 cups of milk (or coconut milk for my dairy free friends), 1 chicken, and 1 bunch of leeks. This soup is simple, easy to make, satisfying, and utterly delicious, no matter if you’re from 1744 or 2016.

Cock-a-Leekie Soup

Serves: 4-6
Ingredients
  • 3 Tbs grass fed butter or ghee
  • 1.5 pounds leeks
  • 1.5 pounds potatoes (I used a blend of red purple and yellow baby potatoes)
  • 24 oz (3 cups) chicken bone broth
  • 1 whole rotisserie chicken, meat removed from carcass and shredded
  • 1 can coconut milk (or ½ cup cream plus 1 cup whole milk)
  • Salt and pepper, to taste
Instructions
  1. Melt butter in a large soup pot over medium heat.
  2. Add leeks and a pinch of salt and saute until translucent.
  3. Add potatoes, chicken broth, and additional pinch of salt. Bring liquid to a boil and then reduce to a simmer. Cook until potatoes are fork tender, about 8 minutes.
  4. When potatoes are cooked, add shredded chicken and coconut milk (or whole milk and cream) and cook additional 5 minutes until heated through.
  5. Add additional salt and pepper to taste.
